Cranberry Relish from Mary Hazen

1 - 12 oz package of fresh cranberries
1 20 oz. can of crushed pineapple in its own
juice
1 1/2 cup Light brown sugar
1 tsp cinnamon
1 tsp vanilla
1/2 cup orange juice
2 cups cut up pecans Note from Pat. 2 cups of pecans were too much for me. I cut
it to 1 cup. I liked it much better. 12/06/09 )

Wash cranberries in a colander and place on a cookie sheet.
Spread out & pick out the real soft ones & pitch them.
Place cranberries in 4 quart kettle.
Add entire can of pineapple, all the brown sugar & cinnamon.
Cook till berries pop. Add vanilla, orange juice & pecans.

Stir well. Cook a few more minutes.

Mixture thickens more as it cools.

This freezes well. It is great with you Thanksgiving turkey dinner
but is also great with chicken
